Just trying to get something straight.
Is the 1080/60p a slomo format or is it just a way to get as much information in your footage as possible. Like 24fps compared to 30 fps (29.97) is more of a style to give that movie feel since movies are 24fps. Or does this 60p literately turn into 29.97 fps in a timeline giving a slow motion to the clip like over cranking a film cam?

The short answer is that it's any or all of those things, including the native form never adopted by any broadcast or format standard yet remains playable on the pc, ps3 or various other players.

It is a live format, higher res than 1080i. If you choose to slow it down in post, it would make for superb slow-mo in a 24p or 30p project.

My "video cameras" only shoot 1080i (29.97), but I just picked up a GoPro that offers 720p60 and I am impressed by the slow-mo capabilities - 50% is just silky smooth, so I'm liking the 60p mode!

1080p60 will have the same look, simply higher resolution of course. 60p is good for sports to better capture sharp fast motion, as you have twice the images per second. Then there's the slow-mo at 30p or 24p playback rates. 1080p60 not supported for Blu-ray, but 720p60 is, so that might be a delivery option.
