After Effects is another, if you know what your doing you can get things done in minutes what would be a pain to do in another program.
HandBrake is a good DVD Ripping Utility
Cyberduck for FTP access
Limewire for P2P
Celtx Free for scripts
Google Earth because its fun
Adium for all your instant messaging
VLC because you'd be dumb not to
Flip4Mac because Microsoft is a codec license nazi
Toast Titanium is useful for lots of things
MPEGstreamclip to read odd MPEG formats
I use all the Adobe programs to some degree along with all of those but its up to you. Since you just mentioned your camera lots of that isn't needed but all those programs are useful and I find I need them during the month at some point. Some tasks would be really annoying without them, especially the freeware.

wow this is super helpful information , Mr. Kyle Prohaska writes google earth because its fun ... how true . i had no idea about photoshop , VCL , premier , toast , and all the others listed except for FCS.....
as for what i want to film or eat , i want to eat everything and film many things ... such as documentation of effective microorganisms , exploiting canadian government agencies ( such as the police ) , a strength training dvd , a fishing show , and girls . sounds fun huh ?
