The first time I put the GH2 video up next to the 7D video I thought I had totally messed up the 7D and it was slightly out of focus on every shot. Turns out the GH2 is just that much sharper. Besides, even if you prefer soft HD to sharp HD, it's possible to soften the GH2 but impossible to sharpen the Canons. On another note, I think the Hollywood folks shooting on RED and 35mm would disagree with you on your point that "too much detail and it starts to look more like video."
You have a very good point with the fact that you can soften the GH2, but can't sharpen the Canons... It's true and after reading all of this GH2 glory, I would probably go for the GH2 if I have to buy a camera now.
However, I went with the 60D because it is as good as the 7D, and I fell in love with the youtube clips I saw made with that camera from the start.
I thought 'holy **** I want that look'.
I watched comparisons with the Nikon D7000 and it didnt beat the Canons, so I erased it of the list. Same with the Sony A55. Only thing left at that time was GH-1 and I hated its small shape and was not blown away by the footage either. Then, naively (love makes blind), I assumed the GH2 would not be a real thread to the Canons as well.
As it turns out now, I was wrong as the GH2 definitely is the better camera.
Still, the narative footage I've seen from the 7D blows me away anytime and approaches the look I see when I watch a Hollywood movie on my computer. That is why I bought it in the first place, and I didnt have that feeling yet with the GH2 when it comes to that.
However, when I see GH2 footage of landscapes and buildings, it amazes me as well. What a detail...
