7D Would this card (60MB/s) be much more than enough for 7D's Video capabilities?

60MB/sec is more than enough. 30MB/sec is what I use. I've used these Sandisk Extreme III cards and never had them stutter once.
 
I dont see how this card could give you higher quality though :) faster doesn't mean better quality ! If the transfer speed is enough then you are safe. If it is much more then the camera can give you then you are simply wasting it or anyway it doesn't make your film look better :)

1080p is recorded at roughly 5.6MB/sec. Card speeds above 10MB/sec will only give you faster transfer to computer. Video quality is not affected by card speed (unless it dips under 7MB/sec, which would give you instant "no quality at all" as camera would stop recording).
