will any manual Nikon AIS lens work?

Will any old-school manual Nikon AIS lens work with the 7D? With an adapter of course.

It's the newer Nikons (without Aperture rings) that do not work. Is that right?

On the old manuel lenses, do you still get the "What you see is what you get" through the 7D live view with DOF, f-stop, ISO, etc...??

ai and ai-s lens will work very well, I have a few. There are a couple that have mirror clearance issues but the mirror flips up out of the way when ur in liveview/video mode.

I have had to modify one of my nikon AIS lenses before it would work.
The metal protrusion on the back cleared the mirror but was colliding with the little gold EF contacts inside the mount. I wrote about this in these posts here

This is the bit I'm talking about
(not my pic, I'm linking this from a thread in the 5D section)

It bangs into the EF lens contacts inside the 7D body (the little gold dots)

Don't use a hacksaw, carefully bend it repeatedly with pliers.

EIT:
just tested all my nikons (24, 35, 50, 75-150), only one I had to doctor was the 35/1.4
