What to do about AWB (Auto White Balance) on 7D

Hey I just picked up my 7D yesterday, haven't had much time to play with it, do to both work, and Church, not to mention school, and the kids. So I haven't had that much hands on other than 2-3 focus pull tests and quick ISO tests, but what is the deal with this AWB (Auto White Balance) feature.

ARe you guys mostly using the first selection I forgot what its called, or any other ones, or are you disabling it, and if so How are you doing it.

Also i heard a couple of people referencing Sharpness and Contrast settings, as well as their picture profile selections, hook me up with a little info regarding that, like why do that, and where do we select the picture profiles for the movie mode.

Again I haven't had the time to read through the manual entirely, which I will do possibly on Wensday, and do test shoots all weekend (I'm off from work, but not the kids, lol, so they'll be my subjects).

I just wanted to pick you guys' brain prior to that.

For the 5d, however, it applies to the 7D as well.

As far as white balance goes, I generally find the list of presets suffices. The custom WB has worked ok for me as well.
