Using Histogram - Exposure Simulation with manual focus lenses?

Hi
Just picked up a 50mm 1.4 Super Takumar with a FotoDiox adapter for my 7D. To my disapointment, my old method of determing exposure no longer works. (switch to stills mode, turn on Live View and set exposure via the histogram)
If I set the exposure via Live View-histogram, the resulting image is WAY over exposed.

Are there any tricks anyone might share for setting exposure properly with manual focus - manual aperture lenses?

I've also noticed huge exposure errors (at least a full stop) in manual stills mode, so, with my vintage manual lenses, I set the exposure on the movie mode; t2i with ML has live histogram; prior to this, I used a much more time-consuming, trial and error method of taking a still (in video mode), looking at the histogram, returning, changing something, taking another still, etc (works with 1sec videos also, if you don't trust the stills to be accurate)

Thanks
Very time consuming and cumbersome but seems like a workaround, get approximate exposure while in moviemode and judging the image on the LCD screen without histogram, then, snap a pic to view the image histogram, rinse and repeat.

Wish there was some way of entering a compensation value for stills Live Mode-histogram viewing, or, that a histogram was viewable while in MovieMode on the 7D....Canon are you listening?

Hold the AV button and turn the wheel left and right (this fixes the problem on 550D).
