Shutter Speed Suggestions for a Tattoo Timelapse

I'm shooting a timelapse of someone getting a tattoo with a 7d, 24-70 2.8, and intervelometer. It will be a tattoo on someones chest - supposed to take 5 hours as it's a detailed picture of a face.

I was hoping to get some input on the number of stills and the shutter speed I should use.

I want there to be some blur from the tattoo artists hands, so I was planning on lighting it well and using an ND filter so that I can slow down the shutter. I was thinking about a still every 10 seconds with a 1/2 second exposure. Does this sound right for what I'm trying to achieve? I did the math and figured that will give me 1800 stills, or a 75 second timelapse which is about the length i'm looking for.

Thanks for any and all advice.

I'm also interested on what others have to say on this topic; previously, if possible, I've always tried to follow the 180º rule for timelapses too (one still every 10 seconds --> shutter set to 5 seconds; if that leads to blurry images, set it faster but not too much faster); but maybe I'm overthinking this and the 180º rule is not needed for timelapse footage
