Setting GH2 to 720p 60fps

Set the top dial to movie mode. Press menu set and select first icon (manual movie mode). Then move to the second menu choice (should light up as a red movie camera icon) and then select REC MODE. There you have a choice of 1080i, 720p or Motion JPEG.

Got as far as the 24P cinema menu, but when you say 'Select REC MODE' what do you mean?
If I press enter on it I just go back to the camera view.......

Do I have an old firmware or something?!

Let's try this again. The left-most menu choices that include a spanner, etc. should have the top one selected. Do you see three choices that includes 24p Cinema? Cursor over to the left one (manual movie mode). Don't know if you have to select it, but do it anyway. Go back into menu mode, make sure you are in the left most list (spanners, etc.) and scroll down to the movie camera icon. Scroll right and then down and select REC MODE. You should see a yellow arrow on the right of that highlight. Scroll right and you should see your choices.

Gotcha! That works! :) Thanks for all your help, will be sure to sort some Twixtor fun when I get round to it ;-)

'REC MODE' is blanked out, I definitely have 24p Cinema mode on and I'm in manual movie mode.

That's because you are still in 24p mode. Do you see three choices that includes 24p Cinema? Cursor over to the left one (manual movie mode). Select it ...and follow the rest of the instructions.

If the 'REC MODE' is greyed out, then this means you're not in manual movie mode (as confirmed by you stating that you have 24p Cinema mode on). Go back up to the creative movie set and select MANUAL MOVIE MODE. Press the set button. The menu will dissappear, but just press the menu button again to bring it back up. Now scroll back down to the MOTION PICTURE menu and the REC MODE can be selected. In there, you will see the choice to set the cam to record in 720p.

Yes it defaults at 60fps. Also, remember to adjust your shutter to 125. Or higher, I haven't done much with Twixtor, but there is a good tutorial here: http://vimeo.com/23151793

And don't forget to apply one of the good hacks that substantially improves 720p quality (which is just about all of them)
