C200: Set Canon Log3 in camera

Hello everyone, having some issue to set properly Canon Log 3 on C200, with 1920*1080p Mp4 setting. I've set Preset: Off, Gamma: Canon Log3, Color Matrix: Neutral. (Also the LCD shows no log, color are too saturated). But after recording the clip doesn't have Flat colors, but punchy ones. If I choose Preset : canon Log 3, the other voices (gamma , color matrix) are not selectable. How I must set the camera to shot in Canon Log3? Thanks!

Here there is a picture of footage taken from Premiere:

p.s.: I've now included a picture showing the Lumetri oscilloscope with LENS cap on the camera. I've noticed that the black is not so intense with Lens cap, probably it's not so flat in colors like a RAW signal?

This looks like C-Log3 Rec709 colour space. The C200 uses Rec709 colour space when recording MP4 8bit 420 due to the lower bit depth/chroma sampling. Colour will appear more saturated than other log standards you may be used to working with in these modes. I believe shooting raw is the only way to access Canon's true cinema gamut colour space.
