Would any shutter release remote work to trigger the start/stop recording of the 7D Mark II? Assuming I set the shutter button as the record button.

Strangely, Canon's "RS-80N3" description says "Only compatible in still mode. Will not trigger the camera in video mode.".

But if it triggers the shutter button AND if I configured the shutter button to map to the record button, it should work right?
 
Yes it will work. The Canon remote page is saying that because the Canon DSLRs prior to the 7D mkII didn't have the ability to use the shutter button as a start/stop video trigger. This remote is not specific to the 7D mkII, it's built in the days on the 40D, even before video existed.
