I was in the same position a few very short months ago. I HAD to upgrade for newer work I was doing. I went with a Quad Core, it'll last as long as any G5 will, which will be a very long time.
I almost waited, but the last few rumors like this about Apple product releases were wrong. Apple officially won't release the Intel towers until Q1 '07. BUT, on the other hand, they've been way ahead of schedule releasing the Intel portables. I don't trust rumors about Apple. I trust what Apple finally does. Will new towers be out in August? At this point, flip a coin. If they aren't, get a Quad Core. Graphics cards in MacBooks are not up to par, IMHO.
Also, towers are more flexible and upgradable than portables. I use a 17" Powerbook to teach my classes and edit in the field when I "have to". I always prefer editing on a tower. A portable's screen is just way to small for my old eyes...
