Does anybody know what happened to the variable bit rate option? It seems it has disappeared completely from the recent firmware hacks.

Different Hack. The Vari-Frame rate was Hudson's Hack. This is a new compile based on hudson's but reversed engineered from the sounds of it , to fix some bugs that Hudson's had.
