C500: Magic hour / sunset shooting C500 7 Odyssey 7Q+

Hi

Any comment on recording sunset magic hour shots? I am guessing set the camera to raw 4K, Odyssey to RAW RMF. Now the ISO and white balance / Kelvin are baked into the raw file (unlike Redcode RAW), so I am not sure if I should:
a) replicate the natural view as best possible in the display (i.e once focal length and aperture set, ignore white balance and adjust the ISO and Kelvin so that the display looks like the nature being filmed (it will look flat as I am filming with CP locked, but the tones can be made as similar as possible).
or
b) apply a white balance (somewhere 1000 to 2000K) after the basic settings are set for shot composition.

"a)" makes more sense to me as I want to see the sunset effect. If a white wall looks orange in the sunset light that is what I want to end up seeing. I know one can change things in Ressolve and even in Premier (using lumetri effects) and that generally one does a white balance before shooting, but somehow a sunset shot seems different.

(It is a sunset tracking shot of an actress walking next to the sea on the promenade, with Lion's Head and Table Mountain in the background. So I am thinking of going wide 18mm to get more background, but perhaps also to use a long focal length to capture the sun as a huge ball. It is not a timelapse, takes will only be a minute or so, making it easier to change exposure setting during the 30 minutes of magic "hour".)

thanks
Uma
