Is there a way to watch the LCD monitor while in Photo mode like you can in video mode?

Probably cause you're not used to pro video. Usually the viewfinder and LCD monitor both stay on. That's what's normal.

What's opposing actually is being able to look through the viewfinder in photo mode but not in video.

Photo = Mirror down

Video = Mirror up.

Perhaps you need to understand you're not shooting with a "pro video camera", you're shooting with a DSLR.
