I'm not quite understanding why people aren't buying $700 PC laptops that can read P2 cards instead of P2 Stores...

We do both depending on the situation. When we're in remote conditions without a base camp, the P2Store is the solution for a short shooting schedule.
Because we normally shoot higher ratios (around six hours per camera per day), I prefer the PC laptop with P2Genie to dual external hard drives. We typically use Seagate 7200RPM in USB 2.
