How to adjust aperture on Canon 60D??????

Use the wheel atop the camera, or the wheel beside the LCD screen. (I forget which.)
Just got home, I had figured it out before getting back to this thread, You basically turn the shuttle wheel like you said that is to the left of the Lcd Screen. The wheel on top controls iso. Having mastered the t2i I was using the 60d today on a small shoot today ( family ) and noticed it was different. Since I started shooting like around 5pm and it was dark my aperture on my camera was set all the way open. Luckily everything worked out great, but this could have been disaster on a professional shoot. So word to myself is make sure I know what the heck I'm doing before I star recording......

...The wheel on top controls iso...

Actually, by default, the wheel on top controls shutter speed. It only controls ISO when you press the ISO button first. It also controls other context/menu dependent functions of the cam.

And yes, don't show up to a pro shoot without getting all this stuff straightened out first! :)

I'll show up to a Pro Shoot with my mind and will which is all I need. I think you need to learn some respect. It's just like you working on a set and your camera goes down & then you happen to get a hold of another one which you have never used before so you might not know exactly how to navigate through it, but you know what you want to do. The same thing applies here, I always make it happen whether I have used a tool before or not.

ps. My footage came out great, so I'm not worried what you or anyone thinks

I don't think he was attacking you... Seems like a friendly agreement marked by a happy face. :)

Not to get in the middle of it, but I don't think they meant any offense. You yourself said "So word to myself is make sure I know what the heck I'm doing before I star recording......"
