Home decorating show advice

I am about to embark on a major project (for me.) Basically its a season of a home decorating show. Last season was shot on Beta SP, about 55 tapes. This go round I am planning to shoot on two hvxs in DVCpro50 mode.

Here is my gear
2 HVXs, with wide angle adapters one zoom through one not,
5 8gb cards
2 firestores
A powerbook titanium
I have a bunch of random accessories, varizoom monitors, bebob focus, zoom controls, spider brace ect.

What I am asking advice on mainly is how to manage the footage. I am extremely cautious and definitely want to back up as I go. The schedule does not allow reshooting much of anything.

Do I shoot to cards and the firestore at the same time? Treat the cards as my original footage and the firestore as backup? Do I shoot the same way but use the firestore as main footage because it can be quicktime rather than p2 and just archive the mxf files from the cards?

Should I purchase a p2 store? Will it make things easier? ALmost everything is 2 camera and borderline run and gun so I wonder what the fastest way to stay on top of dumping footage.

Anyone done anything like this and how did you pull it off?
