Help me spend some money

I work for a University and we are trying to come up with a set of gear to record speakers and classes. I have the basics of what I want figured out but still have some questions.

Camera - Canon XH-A1S
Mics - Sennheiser Evolution G2 100 Sets (2 sets)

That should take care of the camera and mics, but my next problem is related to the subject of most of our recordings. The vast majority of the recordings we do are of long winded lawyers that tend to go for 2+ hours at a time without a break. The long duration of the recordings and the fact that I want to spend as little time in post as possible leads me to want a disk based direct to edit setup. I have seen the Canon FS-CV but was wondering if we got a Macbook Pro we could simply record with some piece of software.

I'm a software developer by training so some of this film stuff is greek to me.

Here is some examples of our subject matter. http://media.law.louisville.edu/

Editing software can generally capture directly from inputs, but in that time range it gets dodgy from what I understand. Adobe OnLocation can do it as well, but I don't think that one works on Apple OS's.

What about using quicktime pro to capture? I have a Mac Pro set up with Final Cut Studio to edit everything with, so I really don't want to buy another software suite.
