Will the Firestore FS-100-160 be fully compatible with other company's cameras, specifically the Sony HVR-Z1U? They are on sale at B&H and if so, I want to pick up two! Thanks!

No. It'll record DV, but not HDV.
Other firestores will record HDV, but the FS-100 doesn't.

Thanks Barry! Any ideas on an alternative in regards to this? I looked at the Sony HVR-MRC1 which uses flash cards, and seems like it would be annoying to have to get a bunch of cards...

There were several manufacturers of direct-to-disk recorders, including nNovia and Shining as well as Focus. The FS4 HDV recorder was made specifically to handle HDV, and should be less expensive than that FS100. Surprised B&H doesn't carry it though.
