Did a two camera C300/C100 shoot this week. I found that the cameras matched pretty closely. I used EOS Standard matrix with Norm 3 gamma, as I was in a controlled studio environment, so wanted color points close to REC709, which EOS Standard provides, other than a Red push. Norm 3 is REC 709 gamma curve.
I had to reduce blue gain with the C100 to -2, and bring up detail from -4 to -2 to match the C300/Alura, but that's it. We had a Leader HD scope, a very experienced DIT, and other than lens differences of an Arri Alura on the C300 PL and a Canon 50mm on the C100, I feel comfortable that, at least with the profile settings we used, the cameras match well. We recorded both to Ki Pros.
