Custom Picture Profile

I'm curious if something like this is really worth using VS just doing it in post. For example, if you have a curve that boosts the lows in camera to get that flat look, (which is doing some kind of processing no doubt), is the processing going to be better in-camera, or would a proper color correcting program do a better job with essentially the same source images?
