choosing 720p or 480 for my documentary

Hi, i will do a small documentary with mostly footage in 480p (old footage) for 70% of my movie.

I will use also hd video of pictures from a book i will shoot with a dslr.

Maybe i should put my project in adobe premiere in 480p.

What are your thoughts ?

id shoot in 1080 edit in 720 and just find a background to use for behind the 480.
