Can someone explain knee control?

This is something I've never fully gotten. Since it's a term that also applied to my 90s days in the music studio with certain equipment, it just became one of those "I know what it is sort've when I hear someone else mention it, but not really" things. Google was not my friend on this one. If someone can point me to an article, manual or something, I'd appreciate it.

Straight from his book:

"The knee helps prevent overexposure by rolling off the intensity of the brightest parts of the picture."

So the knee essentially rolls off the brights to help prevent a blowout.
