A few T2i Video question

So, I bought the camera 2 days ago, and I have not been able to use it yet. All I've done was take a few demo shots (pics/vids) as I was busy, but I'm looking to start tomorrow!!

Anyways, I was looking over some of my pics. and I'm not so sure, but the image does not look as sharp as I was hoping it was. I'm not sure what I'm doing wrong, as I am a bit of an amateur when it comes to camera operations and stuff.
I have the T2i, with the Canon 50mm f/1.4, and it looks alright, but not AS good I was expecting for some reason. When I looked on the camera display it looked pretty grainy too, even at low ISO settings. And when I looked on my PC, it was meh. Still good, but not the best.

Any tips? On what I could be doing wrong, or what I should do?
- As I said, I am fairly new to this stuff, I have never really used all these types of settings, but I have been learning about them for a while, but still don't know it all.

Secondly, when shooting video, I cant change the f-stop (if that's what it's called??) I can change the shutter speed, and ISO, but not f-stop.

--------
And typically for video I should keep the shutter to 1/50 when shooting @ 24p, and about 1/120 @ 60p, correct?

I'll post some pictures up in a bit, for some reason I was not able to download them, so I'll have to re-take some.

As for the video, is there a way to change the f-stop? Its always at 5.6
