7D Settings - Wedding

Hi,
Wedding coming up this June and shooting exclusively on DSLR's (Canon 7D's). What are your thoughts on Picture Profile settings? I've been on it for quite some time, but weddings... I've shot various clips using Philip Bloom's profile (similar to superflat with saturation and what not turned down) and that works with extreme color grading in post, some resulting in a lot of noise (once i bring up the highlights and shadows, gain, saturate etc) which is not good and I would like to avoid that. Wedding videos are intended to be rich colors and saturated just a few notches above natural (my style) unlike film which is somewhat the opposite - so I'm not sure if his profile will work for that matter. Also "Highlight Tone Priority" on or off when video noise is a concern.

Thanks in advance.

Getting into the DSLR thing my self for weddings, only as a third camera for the ceremony. I have found that the audio workflow is not very user-friendly. I bought a beachtek DXA-SLR and have had to return them (2) because of the digital noise on the left channel. So I us 2 HMC 150 cams to capture the main video and audio with Wireless mics and then use the 7d/t2i for strictly artistic shots. This seems to work best for me. I also only use the 7d/T2i at the house/salon due to the artistic feel and audio can be captured straight from the camera. Hope this helps.

Sorry I was referring to image (video) noise, not audio. When we film weddings, we have a whole crew doing sound separately which is processed in post and later mixed and synced with the final footage. I'm sorry for not making it clear.
