What are some of the more popular settings to capture action with the 7D?

shutter, menus, etc...

1080 by 1920. 24p no slow action tricks or fast, camera kit lens. Camera will be locked down and there will be no wide angle lens purchase. Solid clothing colors will be used. Not looking for the effect of blur, as crystal clear of an image with this particular camera is what we need, post is handling the rest. Thanks for your time, Adam

I'd say that depends on the nature of the action, but given what you stated as the scenario, the only real option is to make sure the subjects are well lit and to shoot with an increased shutter speed to keep motion blur from destroying detail.
