I've shot many many hours on both cameras (dvx and hvx) and I can tell you that there is a huge difference between the two.
I don't like to even look at stuff shot on my DVX anymore. It saddens me.
and bugs, I agree with you that HDV doesn't look that great, buuuuut the HVX captures in a DVCPRO HD format. so maybe you're thinking of some sony camera

Many things look soft because HD is much harder to focus and people don't buy monitors or take the posistion of AC as seriously as they should.
Saturation is an in camera setting... I don't think I need to say much beyond that.
