What's the best settings, for shooting as "flat" as possible?

I want to do all colorgrading in post and want to shoot as flat as possible, getting as much information on to the P2-card as possible. What are the best settings for this? Are there any better custom settings than those that come with the camera? Where can I find them?

Cine V will give you the most latitude on exposure, if I remember right.
