what kind of sound proofing should I get for this walk-in closet aka recording booth

It's too late for sound proofing, as that requires elements that are constructed into the room (floating floor and ceiling, specially-designed walls). What you're looking for is sound treatment.

The "portable sound booth" you linked can help, though I'd go with the more compact Reflection Filter. There's also a less expensive version.

What you're really looking to do is to knock down reflections. You're in a very small space with hard, reflective walls. The Auralex pyramid foam is a starting place, though they also make room kits that offer good coverage in ready-to-install selections of panels. The biggest problems are direct reflections and corners. Corners act as bass enhancers and can make low frequencies terribly overbearing. I'd put panels at, just above, and just below mic level on the two vertical walls, and possibly the inside of the door, add a little more coverage than that on the tilted wall/underside of the stairs, then add a couple of bass traps on the tilted corners. You have enough stuff under the desk to break up anything that gets caught under there.

My take on low cost treatment... A box of Armstrong 2x4 drop ceiling inserts. http://www.lowes.com/pd_89091-61-29...rentURL=?Ns=p_product_avg_rating|1&facetInfo=

Peal the white pebble finish from the rigid insulation, and use a product like Super 77 spray adhesive to stack two, three, or four panels together to the needed thickness. Then cover with an attractive fabric and attach to your walls.

Pickup a small rug for your floor and you will have a good start to your booth that not only looks good, but also sounds good.

Thank you both very much for your feedback. Actually I forgot to mention that my floor is already carpeted, so would I still need a rug? Will definitely look into all those links. Thank you both again!
