What is sub-recording?

I understand and plan on using dual codec to create 8mb proxy files. But what is sub-recording?

Yes, I had read that. It mentions sub-recording but does not explain what it is.

They classify the two recordings as the "main" and the "sub" recording. It's not necessarily a "proxy", as a proxy typically means a low-resolution, tiny bandwidth version (and, well, the 8mbps may qualify as tiny bandwidth, but it's still a full 1080p). So your main recording is either UHD or high-bandwidth FHD, and the sub recording is the FHD at a lower bitrate (either 50mbps or 8mbps).
