Hi, I need to do a short in 16x9 and I don't have an adapter. What should I do for best quality?

Widescreen mode?

Squeeze mode?

And I keep hearing of this thing called uprezzing? What's that and should I use it and how?

I would shoot it in 4:3 and just mark off an external monitor so you can see what the 16x9 frame is. Then in post make your 16x9 crop. That way you have room to go up or down on the image if your frame was off. Uprezzing is used when taking SD footage to true HD, HDTV, or film. This is actually adding lines of resolution and not just the aspect of the image.

Should I consider uprezzing? Will I notice a difference if I view the footage on a moderate size TV and class room size projection?

How do you uprezz footage? If it was easy or inexpensive, why wouldn't it be done ALL the time? My apologies if it's an ignorant question.

It's impossible to add lines of resolution. It's possible to use noise removal then fractal based scaling to fake it. It's not expensive (70 for noise ninja, 300 for geniune fractals) but it doesn't work perfectly and the time it takes it absurd.

If he doesn't have a monitor [first off, get one] you can put black bars on the lcd screen too right? So you have 16 x 9 space to work with, but not that res.?

Put some of the Fellowes-type self-adhesive clear Palm-screen protector plastic stuff over your camera's LCD, before marking off your 16:9 area...
