The DVX has very vibrant colors, even on NORM matrix. CINE matrix even without a chroma boost often has illegal colors. CINE can even look a little cartoony, and because it's so saturated, any imbalance in the white balance can really throw your skin tones off.
Unless you're look for a specific over-the-top color look, I'd stick with NORM. Best yet, do some tests and can the look you want. Be careful with white balance, though.
The cine matrix, is alsothe most ghastly on the noise scale.
while it looks great on the DVX/HVX on a monitors, it really looks pretty bad on the recorded footage. stick with NormalMAtrix, but bump your saturation up to +4
