I have an unhackable GH1, I am still using it for my university film project and it seems ok. I think generally people will say don't expect to use it for high detail shots or fast moving shots.
the unhacked GH1 is still a great camera, unhacked the maximum is 17Mbps and hacked beyond 17Mbps, the GH1 records using a variable codec so it will only use the amount of bitrate it needs to capture the detail in the scene you are pointing it at.
when doing a quick pan the bitrate jumps up and thats where a hack kicks in to capture above 17Mbps, unhacked it will jump up to 17Mbps when panning and max out, creating what it called mud (when lots of similar colours group together as fewer colours to work within the bitrate *i think, i may be slightly wrong*)
some scenes may not need the hack to capture it beautifully so don't worry about not having the hack, great stuff can be had from an unhacked GH1.
shalow depth of field lenses will make the bitrate drop hacked or unhacked as all it has to capture is an in focus area and a dreamy blurry background so it may only need a bitrate of 14Mbps to get everything it needs. (14 was an example)
some of the best footage ive shot was before the hack  the hack slowed me down a little as it seemed like more and more to learn, better to just get out and shoot!
other factors i feel are more important to get great footage, light! when its summer the light and shadows cast are so beautiful and really its all that stuff that makes things special, not high bitrates.
the work done by all the great DVX users is amazing and deserves loads of props! the hack does do a great job but id say its more noticable to more expert people who really need to get every drip of quality from the camera, for myself and loads of other guys its great but i probably would be just as happy without it
I have seen unhacked footage from the GH1 that looks every bit as gorgeous as footage from a hacked GH1. It only depends on what you're shooting. You'll have some more limitations, but still a great camera.
