Ultimate DVD and YouTube encoding?

I will be shooting a wedding with the intent to make a SD DVD. Which format will be the best choice to record in to produce the best looking DVD?

PH1080_60i,
1080_30p,
1080_24p,
720_60p,
720_30p,
or 720_24p?

I also am shooting videos for local businesses to put onto YouTube HD. Which choice works and looks best? I'm thinking 720_60p will produce the smoothest video while being slightly less sharp that 1080_60i.

I'm editing with FCP7.
 
This is a simple one. Shoot 720/60p. This gives you the option to do some slo-mo very easily (you are selling the B+G the dream) and 60i, 30p, 24p can look nasty when you slow it down). 720p takes less space on the hard disk (transcode using ProPres422 LT) and edit as a 720/60p timeline.

When you are done editing run it through compressor for DVD settings. Do the same for YouTube (but obviously use YouTube settings in compressor for that!).

The difference in sharpness to 60i is negligible - you won't see any benefit on the DVD.

If you plan to put something on YouTube then you should be shooting progressive anyway because you would need to de-interlace for playback on a computer (i.e. YouTube) and so will lose vertical resolution when you do that (effectively making it 1920x540).
