As far as I know, there are no major tradeoffs to using the electronic shutter vs. mechanical in the GH5. Perhaps for very fast moving subjects the rolling shutter would have some effect, but you shouldn't really worry about that for timelapse subject matter. I always have used the e-shutter for timelapses with my GH4; saves thousands of shots on the shutter. Haven't tried it yet with the GH5.
