I wanted to ask if these things were necessary for me to set? Do they have anything to do with time stamps? cause I certainly wont be using that.

Setting the time as your timecode is good to do if your shooting say a long interview and your field producer or reporter will set their watch according to the time on your camera. When they hear something they like during the interview or speech they will make a note on their paper of the time. Then in post they can easily find it on the tape by going to the same time setting. That is not needed in everyday shooting.
