Great! I'm looking forward to seeing the results.

As a shooter, I've been color correcting XH-A1 footage for the past couple of years and have been plenty happy with the results. Can I expect about as much from the GH1's codec?
When you import the footage into your NLE, you pick the format and the color space of that format. If you are concerned about colore fidelity, pick a 4:2:2: format.
Compression isn't really an issue in grading. Philip Bloom made a claim that he thought it was going to be a problem, but I think he's operating under a mistaken assumption. (Maybe he can clarify how it might be a problem or why....)
The image quality is what it is, its not going to be degraded by grading, and if you're working in a sufficiently deep color space, it will be the same with any other camera working in that same color space.
Compression isn't really an issue in grading.
As far as what Philip said about grading, I concur. I have a corporate client who I still do shows on DV for and whenever I am color correcting those shows, I forget how fragile DV and all 4:1:1 or 4:2:0 codecs are. I am used to grading DVC ProHD and lately AVC Intra and they give you so much more room to "push" the signal.
That's one of the things I dislike about the EX1/3. Love the camera and picture but it seems that you cannot push the image as hard in color correction.

Well, yes, now that you mention it. But if I recall, Philip was using Magic Bullet, which I consider more of an add on effect, not actual grading done in FCP 3 way CC or in Color or Colorista. If you have used Magic Bullet, I would term it more of a look effects suite than used for actual color correction.
