I thought I read somewhere that you can snap a picture when filming on the GH1, but if I press the shutter button when filming, it just stops the recording.

take a picture while filming?

if you think about it, taking a pic may disrupt the video recording by trying to write a pic file and that's no good. It would most probably ruin your shot caused by camera shake by pressing the button. I'm pretty sure i didnt come across anything like that whilst reading the manual.

You can do this on the Canons, but not the Panasonic. And yes, MR Fanny has it right -- on the Canon, it disrupts the video recording. It results in a "freeze frame" in the video that lasts for about a second or so, while the still is being written out to the card; then the video resumes.
If you want pristine stills and simultaneous video, that's what the Scarlet and Epic promise. If you want pristine stills and are willing to sacrifice the video to get them, the Canons can do it, but the GH1 can't.
