what would be the best way to monitor sound? I really care only for the person voice
and although I can take care of peaking I have no way to know how much ambience
is recorded on the external mic.

For live monitoring? Just use a good pair of noise-isolating headphones, and to isolate channels just remove one of the pads from your ear. Listen intently to only the one you want to hear.
