What the ND page in the menu do? Never understood.

ND page in the menu is a built-in colour corrector to correct for shifts in colour between different NDs. Potentially needed because the F35 has a wider colour gamut so sees colour shifts between NDs where other cameras can't.

In reality, totally unused feature. They ditched it for the F65.

No, you could use a grey card and basically perform a manual white balance to each setting. The camera would then remember it, but you'd have to remember to switch setting when changing filters.
