Sony a7s ii / a7r in camera saturation vs Post

I have been experimenting with picture profiles lately, and i found that i with s-log2 / sgamut3cine and boosting saturation in the +20 area, i found myself having a pretty nice image ''in cam''.

Out of curiosity, what are the benefits of doing it in post? If the image is too saturated, removing saturation in post is pretty easy - Almost everyone i see color grading s-log footage boosts saturation at some point - so wouldn't it be simpler to boost sat in cam?
Am i missing something here?

One of the main reasons not to boost in cam is because one of the color channels can clip easier, and then you have lost data. If you keep the saturation low, you have less chance of this, and can always boost it later.

As JoeThePro said, boosting it in camera can create nastier highlight clipping. But having to boost it in post makes codec issues more visible. I usually set it relatively high in-camera (just enough that I don't have to increase it in post).
