I shot on a DVX100A with widescreen bars on in-camera. I am using iDVD to burn DVDs of the film. Should the DVD project be widescreen?

It will be letterboxed. if you want 16x9 widescreen that will fit a widescreen tele shoot squeeze.

No, you need to render a 4:3 DVD for it to look right. It will be both pillar and letterboxed on a widescreen TV and will display normal letterboxing on a 4:3 TV.

If you already shot letterbox, and you want to author that footage directly to DVD, you'd author it as a 4:3 DVD. Letterbox footage is 4:3 footage with black bars on it.

If you want to author a widescreen DVD, you'd have to stretch the DVX footage vertically until the letterbox bars were cropped off.

Both 16:9 and 4:3 are 720x480 in standard-def. The resolution doesn't change, it's the shape of the pixels that changes.
