Shooting with white board on stage

Hi,
I did a shoot (first with this camera) on a lit stage and boy were the colors fabulous.

For exposure, I set it manually with the wheel. The only problem I found was that when my speaker walked near the whiteboard, the exposure went haywire.

I am writing to ask if someone can tell me the best way to approach this. Is it possible to set levels manually and then lock it in? If this is a common feature, forgive my ignorance in missing it.

Press the wheel (as though it were a button). This will put you in manual iris mode so that when you adjust the wheel your setting will stay put and won't respond to changes in scene brightness. Press it again and the camera reverts back to auto iris.
