"Shoot Flat" but how flat

I have read several posts about the scene file setting and the more more I care about the flatter my settings get. But wouldn´t it be easier to shoot at the lowest settings in the scenefile and do the rest in post.

I have to do some cc anyway. Any advice appreciated.
