In P2 mode, with a lav and a shotgun on A1 and A2, and the HXV's mics filling the 4 channel audio on A3 and A4, how does one 'toggle' the LCD to show A3, A4 levels and how do you enable level setting for them?

You don't. The HVX only meters channels 1 and 2, and doesn't allow level setting for channel 3 and 4 (testing has seemed to indicate that channels 3 and 4 are equivalent to the gain dial at the top (halfway) point.
The trick, if you're doing all this during pre-testing/sound check, is to switch between internal mics and external inputs, which reverses 1/2 and 3/4. If you have a mixer, set the cam for Input 1 and Input 2, set the gains at the mid point, and calibrate the mixer to that. Then, flip the switches to INT 1 and INT 2. Use the meters and camera gain for those, and the mixer meters and gain for channels 3 and 4...
