scene settings for bright sunny days on snow

Scene file settings aren't going to be as much of a factor as using ND or perhaps a polarizer. Depending on how much sun you have on that day, the internal ND might not be enough.

Ditto, it's primarily making sure that you are not burning off your highlights. Use the zebras to stay under 100 IRE, and keep detail in the snow and your subject. A contrast reduction filter will work miracles to keep the harsh contrast under control, in conjunction with an ND or Polarizer like Horse said.

Color wise, make sure you white balance, especially if there is no sun. You will have lots of blue sky light everywhere and off the snow.

Lightingwise, try to keep the sun behind you and 3/4 above, rather than behind the subject. Last thing you want is a sun reflecting off the already blown out snow on a WS. The snow will act as a fill light, just don't let it bounce a hard light source from below into the subject's face. Drop down some black duvetyne if that happens. On a CU though, you can use the sun for backlight, makes really pretty pictures with snow in the distant background.

If there is no sun, use a hard silver reflector to harness and reflect hard light above eye level into the subject. That will ensure that your key light is not coming from above and below the subject, sky and snow. Got a HMI available? Use it in this situation as a key light. Make a sun.
