Scene file settings to match Sony HVR Z1?

I have found that it is very hard if not impossible to match cameras of a different brand. One brand was always warmer or cooler than the other even after you WB to the same white card, not to mention contrast, and how sensitive they are in to low light. I have found that even cameras of the same modle can have large differences in image depending on the hours of operation on the camera.

The formate we are shooting is 1080 we want to end up with a 24p look. The 24p mode on the Sony looks like crap, my HVX 24p mode is great it acts like a film camera in cine d it acts like film 250 or 320ASA. Im lost with the sony, I heard that it is best to shoot in 60i and deinterlace in post to 24p. Is that true also with the HVX? I would like to acheive a match in camera on set so that we can see the look I want on the monitors. Should I shoot both cameras 1080 60i? What about the gammas? Color correction in camera settings? master ped etc...

Bonus question , what are the setting that give me a basic film look match with the Cannon HL1 and the JVC HD camcorders?
