Recording from 5d3 HDMI out

A few threads below, I asked how well a Pix 240i would work with a 5d3 running ML. I really need a bit more information than just that and need to better understand the big picture.

Could someone point me in the direction of a tutorial describing external recorder workflow and how the cam and recorder should work together. Can you capture uncompressed raw from the HDMI out? What devices (codec specs) will best capture that output. Is it best to capture in a (somewhat) compressed codec like a HQ prores or similar and have the recorder do that transcoding before the editing process?

I was thinking about a Pix since it has pristine audio, time code, a passable monitor, and also has SDI inputs for other cams.

In my case, I am buying a 5d3 but mainly for photography. But as long as I have it, I might as well set it up for video since it will do things my present cams don't.

TIA

The latitude you gain from using an external recorder with the 5D3 is miniscule..... it will be a 8bit signal wrapped in something else, thus you don't really gain anything that will be noticeable in the long run.

I think the reason that some people get recorders for it is because it's easier to work with workflow wise... and of course that you can carry larger portions of data rather than offloading CF cards all the time.
