Have to go with "Being John Malkovich", "Adaptation" and "Abre los ojos (IMDb - Open Your Eyes)" which is the film Vanilla Sky was adapted from. You know, even though it was mainstream Arnold Schwarzenegger did "Total Recall", "The Sixth Day" and "End of Days" which were all straight-forward but kind of weird.
I'd be remiss not to mention: "Identity", "The Usual Suspects" (of course) and "Frailty".
What about "Wild Things" with Matt Dillion and Denise Richards how many ways could that thing twist?

Wild Side - An investment banker (Anne Heche) buys a house with an ocean view she can't afford so she moonlights as a $1500 a night call girl who is forced by a federal agent to setup a guy who launders money (Christopher Walken) who used to be married to an Asian woman (Joan Chen), and even cuts and dyes his hair to look like hers, and gets her to help him launder money at the investment banker/call girl's bank by going there and pretending she has a shoe company and whose money laundering boyfriend later falls in love with the investment banker/call girl and asks said investment banker/call girl to seduce his wife and it gets weirder from there ....
